In what way does she love you? If it looks like marriage, though I imagine there's a long way to go till then, she can easily convert to Catholicism. She can enter the Church as a Coptic Catholic or a Roman Catholic - assuming you are Roman Catholic. It would be more difficult for her to enter the Church in a rite other than her own or her spouse's unless it is the local rite. If she converts and adopts the Coptic Catholic rite, you can petition your local Roman, again I'm assuming you're Roman, bishop and your local Coptic bishop so that you can switch rites. Regardless of which Catholic rite the two of you end up practicing, it should be spiritually edifying for you both. It is preferable that a couple share one common rite, not only for the spouses' own purposes, but also for the purposes of their children.

That is a good thing if you also love her, and you intend on getting married if all works out.
The problem you will now face is convincing her family that you should get married in the Catholic Church.
The Coptic Orthodox are known to be very strict and in all probability they will want you to get re-baptized in their Church and get married in their Church. I heard of several stories where this was demanded not only of Latin Catholics and of Protestants, but also of Eastern Maronite Catholics.

Yes, it almost worked out but her parents found out and since I don't want to convert, we will continue to be friends.
